THAI CHICKEN AND RICE RECIPE (KHAO MAN GAI)
Create the beloved Thai classic, Khao Man Gai (Chicken and Rice), with ultimate ease using the all-in-one LOBO Chicken Rice Set. This recipe follows the convenient packet instructions to cook perfectly tender chicken and aromatic, flavourful rice together in one pot. Complete with the included spicy dipping sauce and clear soup mix, this is the simplest way to bring the authentic taste of Thailand to your table for a comforting and satisfying meal.
Ingredients (for 2 servings)
- 1 pack LOBO CHICKEN RICE SET (120G) – which includes:
- 1x sachet of Rice Seasoning
- 1x sachet of Dipping Sauce
- 1x sachet of Soup Powder
- 250-300g Boneless, Skinless Chicken Thighs (or chicken breasts)
- 200g (approx. 1 cup) Jasmine Rice
- Approx. 1.25 cups (300ml) Water
- Optional Aromatics (for more fragrant rice):
- For Garnish and Serving:
- Fresh Coriander
- Cucumber slices
Method
- Prepare the Rice and Chicken: Wash the jasmine rice until the water runs mostly clear, then drain well. Place the washed rice into your rice cooker pot. Pat the chicken thighs dry with a paper towel.
- Cook the Rice and Chicken Together:
- Add the Rice Seasoning powder from the Lobo set to the rice.
- Pour in the water (approx. 300ml). If using the optional aromatics, add the bruised garlic and ginger now. Stir everything together well.
- Arrange the raw chicken thighs flat on top of the rice and water mixture.
- Close the rice cooker lid and switch it on to cook according to the machine’s instructions.
- Prepare the Soup and Dipping Sauce (while the rice cooks):
- For the Soup: Empty the Soup Powder sachet from the Lobo set into a bowl. Add 400ml of hot water and stir well until the powder is dissolved.
- For the Dipping Sauce: Empty the Dipping Sauce sachet from the Lobo set into 2 small sauce bowls. No mixing is required.
- Prepare for Serving: While waiting for the rice to cook, wash and slice the cucumber and prepare the fresh coriander for garnish.
- Assemble and Serve:
- When the rice cooker has finished, carefully open the lid and remove the perfectly steamed chicken. Set it aside for a moment.
- Fluff the cooked, fragrant rice with a fork.
- Slice the cooked chicken into bite-sized pieces.
- Mound a portion of the chicken rice onto each plate. Arrange the sliced chicken on top or next to the rice.
- Serve immediately with the prepared dipping sauce, cucumber slices, and a bowl of the warm soup. Garnish with fresh coriander.
