Virgin Lemongrass Mojito

VIRGIN LEMONGRASS MOJITO RECIPE 

Take a trip to Thailand with this incredibly aromatic, non-alcoholic mocktail. This unique Virgin Lemongrass Mojito highlights the intensely fragrant zest and tart juice of fresh kaffir lime, balanced with cool mint and citrusy lemongrass. It’s a bold, herbaceous, and stylishly refreshing drink for those who love authentic Thai flavours.

Ingredients (for 1 serving)

  • 1 whole Fresh Kaffir Lime, cut into wedges
  • 10-12 Fresh Mint Leaves
  • 4-5 Kaffir Lime Leaves, central stem removed and leaves coarsely torn
  • 1 stalk of fresh Lemongrass, prepared (see Method)
  • 2 tsp Brown Sugar (or caster sugar)
  • Chilled Soda Water, to top up
  • Plenty of Crushed Ice
  • For Garnish: A sprig of fresh mint and a thin stalk of lemongrass

Method

  1. Prepare the Aromatics: Let’s unlock those amazing Thai flavours. Prepare the lemongrass by trimming the top and bottom, peeling the outer layer, and bruising it well before slicing it thinly. Tear the kaffir lime leaves to help release their oils.
  2. Muddle the Base: Place the kaffir lime wedges, mint leaves, torn kaffir lime leaves, sliced lemongrass, and brown sugar into a sturdy cocktail shaker. Use a muddler (or the end of a wooden rolling pin) to press and crush the ingredients, releasing the juice from the kaffir lime and the fragrant oils from the herbs.
  3. Shake it Cold: Add a large handful of ice cubes to the shaker. Secure the lid and shake it well for about 10-15 seconds, until the outside of the shaker is frosty and cold.
  4. Serve: Pour the entire mixture—ice and all the muddled bits—from the shaker into a tall glass. Top up the glass with chilled soda water.
  5. Garnish and Enjoy: Give the drink a final gentle stir, garnish with a fresh sprig of mint and a stalk of lemongrass, and serve immediately.

Note

  • A Truly Thai Flavour: This version uses only kaffir lime for both its incredible aroma and its sharp, tart juice. The flavour is much more intensely fragrant and less sweet than a classic mojito, offering a very authentic herbal taste.
  • Why a Shaker? Shaking the muddled ingredients with ice chills the mixture down rapidly and perfectly combines all the different flavours before you add the fizz.
  • Make it a Cocktail: If you fancy a tipple, this recipe is the perfect base for a stunning cocktail. Simply add a 50ml shot of good quality white rum or gin to the shaker before you shake it with ice in step 3.
