THAI STYLE BBQ – CHICKEN SATAY RECIPE
Fire up the grill for this authentic Thai Chicken Satay (Satay Gai) recipe! Featuring tender chicken marinated in aromatic LOBO Satay Seasoning Mix and creamy coconut milk, then grilled to perfection on skewers. Served with a rich and flavourful homemade peanut sauce also made easy with LOBO. This classic Thai BBQ dish is a guaranteed crowd-pleaser, perfect for parties, gatherings, or a delicious family meal.
Ingredients (for 3-4 portions)
For the Chicken Satay:
- 1 pack LOBO Satay Seasoning Mix (use Pack A – the marinating powder)
- 500g (1/2 Kg) Chicken Breast Fillet (or boneless, skinless chicken thighs for extra juiciness)
- 1/4 cup (60ml) Coconut Milk
- Approx. 15-20 Bamboo Skewers
For the Satay Peanut Sauce:
- 1 pack LOBO Satay Seasoning Mix (use Pack B – the peanut sauce powder)
- 3/4 cup (180ml) Coconut Milk
- 3 tbsp Vegetable Oil (or other neutral cooking oil)
Optional Accompaniments (Ajad – Cucumber Relish):
- Cucumber, thinly sliced or diced
- Shallots or Red Onion, thinly sliced
- Red or Green Chillies, thinly sliced
- White Vinegar
- Sugar
- A pinch of Salt
Method
Chicken Satay
- Wash chicken thoroughly Then cut into long slices
- Dissolve Satay satay powder (Pack A) in coconut milk and mix thoroughly with chicken meat. Marinate for at least 1 hour.
- Put the marinated chicken on a skewer. Grill over medium heat until cooked
Satay Peanut Sauce
Mix the satay sauce powder (B) with coconut milk and 3 tablespoons of vegetable oil. Bring to boil over high heat until boiling.
Reduce the heat and simmer for 15 minutes.
Cook’s tip
- If tender, checking the meat is wanted. Leave chicken in the refrigerator for 1 night before grilling, after it has been marinated
- Soak the skewers in the water for 30 minutes before putting it in the chicken. So that when grilling the skewer doesn’t burn

Using LOBO Satay Seasoning Mix simplifies the process of making authentic-tasting Chicken Satay and Peanut Sauce, as the complex spice blends are already prepared for you. Adjust grilling time depending on the thickness of your chicken slices and the heat of your grill. The peanut sauce will thicken further as it cools.
