SPOOKY COCONUT JELLY EYEBALLS RECIPE

Create the ultimate spooky treat with this fun Halloween recipe for Coconut Jelly Eyeballs! Using reliable TELEPHONE AGAR AGAR POWDER, this recipe guides you through making jiggly, creepy eyeballs with a coconut milk sclera, a green iris, and a black pupil. Perfect for dropping into a bowl of “blood” punch or serving on their own, these ‘Voon Look Ta’ are as fun to make as they are to eat.

Ingredients (makes approx. 15-20 eyeballs):

For the Iris and Pupil (Clear Jelly):

  • 250ml Water
  • 50g Caster Sugar
  • 1 tsp Telephone Agar Agar Powder
  • A few drops of black food colouring
  • A few drops of green food colouring

For the White Eyeball (Coconut Jelly):

Method:

  1. Make the Clear Jelly: In a small saucepan, mix 250ml of water, 50g of sugar, and 1 tsp of agar agar powder. Stir well before placing it over a medium heat. Bring to a boil, stirring continuously, and simmer for 1-2 minutes until the agar has completely dissolved and the mixture is clear.
  2. Colour the Jelly: Remove the saucepan from the heat. Carefully pour the clear jelly into two small heatproof bowls. Add black food colouring to one bowl and green food colouring to the other. Stir both until the colour is evenly mixed.
  3. Create the Pupil: Using a food syringe or dropper, carefully place a small drop of the black jelly into the bottom of each spherical mould. This will be the pupil. Leave it to set for 5-10 minutes at room temperature; it will set very quickly.
  4. Create the Iris: Once the black pupils are set, use the syringe to slowly add the green jelly over the top, covering the black dot and creating a larger circle for the iris. Let this layer set for another 10-15 minutes.
  5. Make the Coconut Jelly: While the iris is setting, prepare the white part. In another saucepan, combine the coconut milk, 100ml of water, 80g of sugar, 2 tsp of agar agar powder, and a pinch of salt. Whisk together and bring to a gentle boil over a medium heat, stirring often. Simmer for 2-3 minutes until the agar is fully dissolved.
  6. Assemble the Eyeballs: Remove the coconut jelly from the heat and let it cool for 5 minutes. It should still be liquid but not boiling hot (this prevents it from melting the layers underneath). Carefully pour the warm coconut jelly into the moulds, filling them to the top.
  7. Chill and Set: Place the filled moulds in the refrigerator for at least 30-45 minutes, or until the jelly is completely firm.
  8. Serve: Once set, carefully remove the jelly eyeballs from their moulds. For an extra spooky effect, serve them floating in a punch bowl filled with HALE’S BLUEBOY Sala Flavour Syrup mixed with water.

Note:

  • Working with Agar: Agar-agar sets very quickly at room temperature. If your coloured jelly starts to set in the bowl, you can gently reheat it in the microwave or on the stove for a few seconds to make it liquid again.
  • Variations: You can change the “iris” colour to blue, red, or any other spooky colour you like!
  • Storage: The jelly eyeballs can be made a day in advance and stored in an airtight container in the refrigerator.
