Spicy Thai Minced Pork Salad (Laab Moo)

SPICY THAI MINCED PORK SALAD RECIPE

Whip up an authentic, zesty, and aromatic plate of Laab Moo (Spicy Thai Minced Pork Salad) in minutes with this incredibly easy recipe. By using the LOBO Laab-Namtok Seasoning Mix as our flavour-packed base, we take all the guesswork out of balancing the spices. Just add your fresh ingredients! This dish is a fantastic explosion of sour, spicy, and savoury flavours, packed with fresh herbs. It’s the perfect quick and healthy Thai meal.

Ingredients (for 2 servings)

  • 1 sachet (30g) LOBO LAAB-NAMTOK SEASONING MIX
  • 300g Pork Mince (pork with a 20% fat content is ideal for flavour)
  • 60ml (approx. 4 tbsp) Water
  • 1-2 tbsp Fresh Lime Juice (to your taste)
  • 1-2 tbsp Fish Sauce (to your taste)
  • 2-3 Shallots, thinly sliced
  • A generous handful of Fresh Mint Leaves
  • A handful of Fresh Coriander, roughly chopped
  • 2-3 Spring Onions, finely chopped
  • To Serve:

Method

  1. Cook the Pork: Place the pork mince and the 60ml of water into a small saucepan or frying pan. Stir-fry over a medium heat, breaking up the mince with a spatula. Cook until the pork is just done and the water has mostly evaporated. This method cooks the pork gently in its own juices.
  2. Season the Laab: Take the pan off the heat. Immediately add the entire contents of the LOBO Laab-Namtok Seasoning Mix to the warm pork. Stir everything together thoroughly.
  3. The Final Flavours: This next step is where the magic happens. While the pork is still warm (but off the heat), add the fish sauce and the fresh lime juice. Stir well. Now is the time to taste and adjust – if you want it saltier, add a splash more fish sauce; for more zing, add more lime juice.
  4. Add the Fresh Herbs: Add the sliced shallots, spring onions, coriander, and most of the mint leaves to the pan. Gently toss everything together until the herbs are just combined. You don’t want to cook them, just let them wilt slightly in the residual heat.
  5. Serve Immediately: Spoon the Laab Moo onto a plate. Garnish with the remaining fresh mint leaves. Serve straight away with a side of Glutinous rice and crisp, fresh vegetables.
