SHAVED ICE RECIPE

Cool down with a classic Thai Shaved Ice dessert (Nam Khaeng Sai)! This simple yet incredibly refreshing treat features fluffy shaved ice generously drizzled with sweet HALE’S BLUEBOY Sala Flavoured Syrup, and can be customized with your favourite toppings like CHAO KOH Toddy Palm Seeds, grass jelly, bread, or sweet corn. Often finished with a swirl of condensed milk, it’s the perfect sweet for a hot summer day!

Ingredients (for 1-2 servings)

• 2-3 cups Shaved Ice (or finely crushed ice)
• 3-4 tbsp (or to taste) HALE’S BLUEBOY – SALA FLAVOUR SYRUP
• Your choice of Toppings:
  • CHAO KOH Toddy Palm Seed in Syrup Slices, drained (recommended)
  • Grass Jelly (Chao Kuay), cut into cubes
  • Bread, cut into small cubes (plain white bread or sweet bread)
  • Sweet Corn kernels (canned or cooked)
  • Other fruits in syrup (like jackfruit, lychee), nata de coco
• 1-2 tbsp Sweetened Condensed Milk (optional, for extra creaminess and sweetness)

Method

1. Prepare Shaved Ice: If you have a shaved ice machine, shave the ice directly into serving bowls or glasses. If not, you can crush ice finely in a blender (add a little water to help it blend, then strain if needed) or by placing ice cubes in a sturdy bag and crushing them with a mallet or rolling pin. Aim for a fluffy, snow-like consistency.
2. Add Your Toppings: Spoon your chosen toppings (like CHAO KOH Toddy Palm Seeds, grass jelly, bread cubes, or corn) over the base of the shaved ice, or mix them in slightly.
3. Drizzle with Sala Syrup: Generously drizzle the HALE’S BLUEBOY – SALA FLAVOUR SYRUP all over the shaved ice. Adjust the amount according to your preferred sweetness.
4. Add Condensed Milk (Optional): If using, drizzle the sweetened condensed milk over the syrup.
5. Serve Immediately: Serve the Nam Khaeng Sai immediately before the ice melts. Provide spoons for enjoying!
