THAI HOLY BASIL STIR-FRY (PAD KRAPOW) RECIPE – GLUTEN FREE
Get ready to cook one of Thailand’s most beloved street food dishes, Pad Krapow, now completely gluten-free! This recipe creates a fiery, savoury, and incredibly aromatic stir-fry, using the unique peppery flavour of holy basil. By using fantastic gluten-free sauces from Dek Som Boon and Abalone Brand, this dish is safe for everyone to enjoy. It’s a quick, satisfying, and authentic meal, perfect for a weeknight supper and even better with a crispy fried egg on top.
Ingredients (for 2 servings)
- 200g minced pork (pork mince) or chicken
- A large handful of Holy Basil leaves (Krapao)
- 4-6 cloves of garlic
- 3-10 Thai chillies (adjust to your heat preference)
- 1 tbsp vegetable or sunflower oil
- For the Sauce:
- 1 tbsp DEK SOM BOON OYSTER SAUCE (GLUTEN-FREE)
- 1 tsp DEK SOM BOON SOY SAUCE (GLUTEN-FREE)
- 1 tsp ABALONE BRAND FISH SAUCE
- 1/2 tsp caster sugar or palm sugar
- To Serve:
- Steamed jasmine rice
- 2 fried eggs, with crispy edges
Method
- Get Prepared: In a pestle and mortar, pound the garlic and chillies together into a coarse paste. If you don’t have one, finely chopping them together works just as well. In a small bowl, mix together the Dek Som Boon Gluten-Free Oyster Sauce, Dek Som Boon Gluten-Free Soy Sauce, Abalone Brand Fish Sauce, and sugar.
- Fry the Eggs: If you’re having fried eggs (and you really should!), fry them in a little hot oil now so they are ready to go. Set them aside.
- Start the Stir-fry: Heat the oil in a wok or a large frying pan over a high heat. Add the garlic and chilli paste and stir-fry for about 30 seconds until it smells wonderfully fragrant.
- Cook the Pork: Add the minced pork to the wok. Use your spatula to break it up and stir-fry continuously until the pork is cooked through.
- Sauce it Up: Pour the prepared sauce mixture into the wok. Stir-fry everything together for another minute, making sure the pork is evenly coated.
- The Final, Crucial Step: Turn off the heat completely. Add the entire handful of holy basil leaves and toss everything together for about 15-20 seconds. The residual heat from the pan will wilt the basil perfectly without losing its incredible aroma.
- Serve: Immediately spoon the Pad Krapow over a bed of hot jasmine rice. Top with a crispy fried egg and enjoy!
