GINGER & LEMONGRASS CHAI RECIPE

Nothing says ‘welcome’ quite like a warm, fragrant cup of chai. This beautiful recipe infuses the classic spiced tea with the fiery warmth of fresh ginger and the bright, citrusy aroma of lemongrass. It’s a wonderfully comforting and aromatic brew, perfect for a chilly afternoon or as a soothing drink to end your day.

Ingredients (for 4 servings)

  • 30g fresh ginger, peeled and grated
  • 4 lemongrass stalks, trimmed and roughly chopped
  • 1/2 tsp black peppercorns
  • 4 whole cloves
  • 2 tsp fennel seeds
  • 4 strong black teabags (like Assam or an English Breakfast blend)
  • 1.2 litres of cold water
  • Milk, to your taste (dairy or a non-dairy alternative)
  • Sugar, to your taste (optional)

Method

  1. Infuse the Spices: In a large saucepan, combine the cold water with the grated ginger, chopped lemongrass, black peppercorns, cloves, and fennel seeds. Bring the mixture to a rolling boil over a high heat.
  2. Simmer: Once boiling, lower the heat and let it simmer gently for about 5 minutes. This allows all those beautiful, aromatic flavours to infuse into the water.
  3. Brew the Tea: Add the teabags to the saucepan and let them simmer in the spiced water for another minute. Be careful not to brew for too long, as this can make the tea taste bitter.
  4. Add Milk and Heat: Remove the pan from the heat and take out the teabags. Stir in your desired amount of milk – just a splash for a strong tea, or more for a creamier chai.
  5. Final Boil and Strain: Return the pan to the heat and bring it just back to the boil. As soon as it boils, take it off the heat immediately.
  6. Serve: Strain the chai through a fine-mesh sieve into a warm jug or directly into your cups. Sweeten with sugar, if you like, and enjoy it while it’s hot.

  • Vegan Option: This chai works beautifully with non-dairy milk alternatives. Oat or soy milk are particularly good choices as they are nice and creamy.
