The dosage is 0.3% of the meat weight. For example, use only 3 grams for every 1 kg of meat. Spread accord evenly over meat while making emulsion. Besides sausages, accord can be used to make fishcakes, squid balls and surimi. The dosage may vary depending on the formulation and process. It's best to run a trial and error experiment before going into full-scale production.
