Soak rice vermicelli in hot water for 4-5 minutes and drain. Heat the oil in a wok or large non-stick frying pan and fry the garlic and ginger for a minute until light brown. Add the pork and prawns and stir-fry over a high heat for 3-4 minutes until just cooked through. Then add the onion and green pepper and cook for a further 2 minutes until almost tender. Add the bean sprouts, rice vermicelli and about 2 tablespoons water cook for 2-3 minutes then add soya sauce and toss everything together.
