SPICY SALTED LYCHEE SPARKLER
Experience a unique Thai-inspired mocktail with this Spicy Salted Lychee Sparkler! This refreshing drink balances the sweet fragrance of lychee with a surprising kick of chilli, a hint of salt, zesty lime, and bubbly soda. A perfect adventurous drink for a hot summer day or to impress your guests with something different.
INGREDIENTS (FOR 1 SERVING)
- 5-6 Fresh Lychees, peeled and pitted (or canned lychees in syrup, about 1/4 – 1/3 cup, drained, reserve some syrup)
- 1/2 – 1 tsp Granulated Sugar (optional, adjust depending on sweetness of lychees and syrup)
- A tiny pinch of Salt
- A tiny pinch of Fine Chilli Powder (or 1-2 very thin slices of fresh red chilli, deseeded for less heat) – adjust to your spice preference
- 1 tbsp (15ml) Fresh Lime Juice
- 1/2 tbsp (7.5ml) Lychee Syrup (from canned lychees, or simple syrup if using fresh lychees and you want it sweeter) – optional
- 150-200ml Soda Water, chilled
- Ice cubes
- For Garnish (optional): A lychee, a slice of lime, a sprig of mint, or a salt & chilli rim for the glass.
Method
- Prepare Lychees: If using fresh lychees, peel and remove the pits. Gently muddle (lightly crush) 3-4 of the lychees in the bottom of a sturdy glass or a cocktail shaker to release their juice. If using canned lychees, you can muddle them lightly as well.
- Mix Base Flavours: To the muddled lychees, add the lime juice, salt, chilli powder (or fresh chilli slices), optional sugar, and optional lychee syrup. Stir gently to dissolve the sugar and salt.
- Taste and Adjust: Taste the mixture. It should be a balance of sweet, sour, salty, with a hint of spice. Adjust as needed:
- More lime for tartness.
- More sugar/syrup for sweetness.
- A tiny bit more salt if needed to enhance flavours (be careful not to oversalt).
- More chilli if you dare!
- Assemble the Drink:
- Optional Salt & Chilli Rim: On a small plate, mix a little salt and a tiny bit of chilli powder. Run a lime wedge around the rim of your serving glass, then dip the rim into the salt-chilli mixture.
- Fill the prepared (or unprepared) serving glass with ice cubes.
- Strain the lychee-chilli mixture from the muddling glass/shaker into the serving glass if you prefer no bits (or pour it all in if you don’t mind the muddled fruit).
- Add the remaining whole or halved lychees to the glass.
- Top with Soda: Slowly top up the glass with chilled soda water.
- Garnish and Serve: Stir gently one last time. Garnish as desired with a whole lychee, a lime slice, or a sprig of mint. Serve immediately and enjoy the surprising burst of flavours!
Note
The amount of chilli is highly subjective; start with a very small amount and you can always add more. The goal is a pleasant, warming kick, not overpowering heat. If using canned lychees packed in heavy syrup, you might not need any additional sugar or syrup. Taste and adjust sweetness accordingly. This drink is all about balancing contrasting flavours to create a refreshing and memorable experience.
